Lifting the Lid on Tasty Tagine

Eggplant lasagna

1 box lasagna noodles
2 large jars spaghetti sauce (we like to use one garden chunky and one three cheese)
1lb Ricotta cheese
2C Shredded Italian blend cheese (any white cheese will do really)
1/4C grated Parmesan cheese
1 egg
1/4t Garlic
Oregano to taste
1 medium eggplant peeled and thinly sliced
1 small box frozen spinach
1 small package medium tofu
